The people are not the risk; the mountains are. The Cares path is cut into a cliff with long unguarded drops, fog rolls onto the high plateaus in minutes and has lost walkers who knew the way, and snow lingers on the high routes into late spring. Tell someone your route, carry a layer and water, and turn back when the cloud comes down.

What to book

Choose a side, not a centre: the massif has no road across it, so a base in Cangas de Onís or Arenas de Cabrales is two hours by car from Fuente Dé, and Potes is the same distance from the lakes.

Very good

Cabrales, a strong blue cheese ripened in limestone caves, is made here and is the thing to buy. On the Asturian side it is fabada, the bean-and-pork stew, and cider poured from above the head in a sidrería; on the Cantabrian side it is cocido lebaniego and orujo, the grape spirit from Potes. Portions are large; one dish at lunch will do for a day of walking.

About level with a metered taxi, and where a city sets a flat airport fare the taxi usually wins.

Several cities cap private-hire licences hard, so at peak the app may simply have nothing to send.

  • Hire car — close to essential; the massif is crossed by no road and each side is reached separately
  • Bus — up from Cangas de Onís to the Covadonga lakes in the busy seasons, when the road is closed to private cars
  • Funicular — through the mountain from Poncebos to Bulnes, a village with no road

  • Eat late — lunch from 14:00, dinner rarely before 21:00
  • Greet with two cheek kisses, right cheek first, between women or a man and a woman
  • Stand at the bar to drink; it is cheaper than sitting and more sociable
  • Say buenos días on entering a small shop, and adiós on leaving

Don't

  • Do not expect anything to be open between 14:00 and 17:00 outside the big cities
  • Do not order sangria in a serious restaurant — it is a tourist drink; ask for tinto de verano
  • Do not tip heavily; rounding up or a euro or two is normal
  • In Barcelona, do not assume Catalan and Spanish are interchangeable — the distinction matters to people
