Very goodCanard à la rouennaise is the old dish, pressed duck with a blood sauce, and few places still do it properly. The everyday Normandy table is better: Neufchâtel cheese, which comes heart-shaped, cream sauces, cider, and the trou normand, a calvados in the middle of the meal. Sucre de pomme, the apple-sugar sticks, are the sweet.
